This is a great article on eating-gluten free on college campuses! We all know that college is where kids eat like crazy on foods like pizza, pasta, and beer, all of which are decidedly full of gluten.
Professor Merill Christenson, who is the faculty adviser to the Celiac Club at Brigham Young University says that, “Raising consciousness of [celiac disease] has something to do with its rise in popularity. Tests today are better than they were, and people are more conscious of it.”
The Celiac Club was formed in order to raise awareness of Celiac Disease as well as form a support group for students.
