Check out this report from U.S. Health and Fitness suggesting that people in a higher income bracket are more likely to be tested and diagnosed with Celiac disease.
Dr. Daniel Leffler of the Beth Israel Deaconess Medical Center in Boston who conducted the study attributes the finding to education and access to information. He said that, "Celiac testing is often prompted by patient request rather than physician suspicion, which almost certainly contributes to the diagnostic disparity seen in this study."
