Paul Antico, founder of AllergyEats has put together a great study that estimates the value of a gluten-free diner "veto vote" when choosing restaurants to eat at with their family and friends. Paul was looking to show restaurants the value of meeting the needs of customers with special dietary needs.
Paul chose to relate his finding to a major restaurant chain, so he looked at Chili's. He found that Chili’s averages approximately $3 million in sales per restaurant annually. On each sales dollar, Chili’s earns about 15 cents in profit.
He calculated that a 9% increase in sales at a typical Chili’s would equate to approximately $270,000 per year. That translates into an additional $50,000 or more in annual profits for an “allergy-friendly” Chili’s versus a similar but “allergy-unfriendly” restaurant.
